For Jose Guerra and Edward Byrne, co-owners of Café Pachamama, a new restaurant in Silver City, owning a restaurant has been in the making for many years. After stints in Hawaii, Seattle, and most recently Santa Fe, the pair bought a historical building and obtained a loan with us for restoration and operating expenses. Their restaurant is now a dream come true. From Peruvian sweets and cappuccino to their potato soup and delicious breads topped with olive oil, feta cheese and mushrooms, their food is a real delight.
Jose, the head chef, knows the business of restaurants. As a native of Lima, Peru, Jose’s father began his restaurant years ago and still runs it today. Edward has been more involved in the hotel hospitality side, working for prestigious companies like the Four Seasons Hotel.
Combining both efforts, it is the goal of Jose and Edward to bring a unique type of experience in cuisine and ambience with Café Pachamama, which had its grand opening on February 3, 2021. The name Pachamama pays tribute to the earth/time mother worshipped by the Indigenous people in the Andes of Peru. With the additional space, they plan to open a gallery within the café. They also offer outdoor seating on the sidewalks and on their outdoor patio in the back.
"I like to think for all of us who work with The Loan Fund that we are in the business of dreams for women and men who cherish the opportunity to one day throw the dice, give it their all and start their business," said Juan F. Albert, a technical advisor working in Southern New Mexico. "And even with our current pandemic, for Jose and Edward, they were not going to allow a current crisis that affected the entire world from stopping them in fulfilling this dream."
